Salad on the Wilde Side       


1 c. wild rice
2 tbsp. salt-free chicken instant soup mix
4 oz. (96% fat free) ham (julienne strips)
3/4 c. hot pepper cheese (julienne strips)
3/4 c. broccoli flowerets (pieces)
1 carrot (thin rounds)
3/4 c. walnut halves
3/4 c. red pepper strips
4 green onions (thin rounds)
Dressing (= condimento):

Tbsp: tablespoon

Tsp: teaspoon

  • 1/2 c. Puritan oil
  • 2 tbsp. lemon juice
  • 2 tbsp. white wine vinegar
  • 1/2 tsp. dry mustard
  • 1/2 tsp. curry powder
  • 1/2 c. raisins
How to do

  • wash wild rice with hot water and then drain
  • combine the rice with 3 cups of hot water and the salt-free chicken instant soup in a saucepan
  • boil, covered, for about 40 minutes, until water is absorbed
  • let rice cool (=lascia raffreddare il riso)

  • put rice, ham, pepper, cheese, broccoli, walnuts, carrots, red pepper and onion in n a mixing bowl
  • If you like, add  a bit of black pepper
  • blend  (= unisci) the dressing ingredients and out them over  salad
  • mix well and chill (= raffredda)
